This one is kind of a bridging course, both sweet and savory.
Out comes a crazy, grabby appliance holding another single bite. The bite is apple, brie, brown sugar and caramelized onion. Skewered on a long cinnamon stick that is smoldering like a giant incense stick. Which it is.
This was my single favorite smell of the meal. And that’s high praise because there were a bunch of other great aromas too. Remember the lavender? The basil with the bass? The twisty shrimp yuba?
